Peanut Butter Pasta Salad

Hello everyone, 

Hope you had a gala time at the weekend, but now we need to kick-start our weekdays with some healthy diet.

So, today's recipe is about 'Peanut Butter Pasta Salad' which is light and filling.

As it is rightly said 'There's nothing a Peanut Butter and a spoon can't fix'.

Peanut Butter Pasta Salad

Peanut Butter in a salad with Pasta- Yumm!!

Prep Time: 20 minutes
Cool Time:10 minutes
Total Time: 30 minutes

 For dressing:
  • 1/2 cup- Peanut Butter 
  • 2 tbsp -Soya Sauce   
  • 2 tbsp- Vinegar 
  • 1/4 cup - Water  
  • 1 tbsp - Sesame oil 
  • 1 tsp each - Chopped Ginger and Garlic
  • 2 tbsp - Brown sugar 

Blend all the above ingredients with the blender well.

Method :

Now in another bowl mix 1/2 cup salad dressing, add veggies ( carrot -1, capsicum -1, cucumber-1 but deseed it and cut in julienne, onion-1  ),  now add boiled rice stick noodles (Thai noodles) - half packet. Add the dressing to it and mix well. Garnish with dhania or parsley and roasted peanuts and Cool it for 5 to 10 minutes.

Note : 

If there is any leftover dressing, you can store it in the air tight container in the fridge for 7-10 days.
